When the warm weather hits (like it has this week) I’m constantly looking for quick, nutrient-dense options that I can whip up with minimal cooking time ? Cue this sesame buckwheat noodle bowl ✨ A super quick, fresh and easy dish that requires almost no cooking time, but had more bulk than typical salads! ??.

To make ??:
1. Put a pot filled with water on boil. Once boiled, add buckwheat noodles or other noodle of choice.
2. Whisk together 1/4 cup of tahini, juice of 1/2 a lime, 1 small cloves of garlic, crushed, 1 tsp minced ginger, a splash of rice vinegar, 2 tsp sriracha (to taste), 1 tsp soy sauce, 2 tsp maple syrup + enough water to get the desired consistency. Set aside.
3. Microwave 1/2 cup of frozen edamame (could also substitute pan-fried or baked tofu). 4. Thinly slice or spiralize veggies of choice- my favourite are cucumber, carrots, peppers, radishes and beets!
5. Once noodles are done, combine everything in a bowl and top with sesame seeds and cilantro. Enjoy! ?
