- 500ml beef or chicken broth (low sodium)
- 200g Konjac noodles (shirataki noodles)
- 1 large scallion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated 🫚
- 1 tablespoon soy sauce (low sodium)
- 1 teaspoon red pepper flakes (adjust to your spice preference) ️
- Salt and pepper to taste
Let’s Get Cooking!
- Sauté the aromatics: Heat a large pot or Dutch oven over medium heat. Add the minced garlic and grated ginger, and sauté for about a minute until fragrant.
- Brown the meat: Add the chopped lean ground meat or chopped chicken breast to the pot and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Add the kimchi and broth: Add the kimchi, beef or chicken broth, soy sauce, and red pepper flakes to the pot. Bring to a boil, then reduce heat and simmer for about 15-20 minutes, allowing the flavors to meld together.
- Prepare the Konjac noodles: Whilst the soup simmers, rinse and drain the Konjac noodles. Add them into the simmering soup, and then simmer for an extra 5 minutes.
- Finishing Touches: Stir in the chopped scallions and season with salt and pepper to taste.
- Serve it up!: Ladle the hot soup into bowls and enjoy your delicious and diet-friendly Kimchi Soup!
