🍋 Ingredients (Serves 3-4):

✔️ 6-8 chicken thighs (skinless for Dukan compliance)
✔️ 1 onion (thinly sliced) 🧅
✔️ 2 tsp paprika 🌶️
✔️ Zest & juice of ½ lemon 🍋
✔️ Handful of parsley, roughly chopped 🌿
✔️ 150ml low-fat chicken stock 🍗
✔️ 1 tbsp olive oil (use sparingly for Dukan)


🔥 How to Make It:

1️⃣ Preheat the Oven

  • Set your oven to 190°C (170°C fan) / Gas 5.

2️⃣ Mix the Ingredients

  • In a large ovenproof dish, add the chicken thighs, onions, paprika, lemon zest, lemon juice, parsley, and stock.
  • Drizzle with a tiny bit of olive oil and season with salt & pepper.
  • Mix everything with your hands to coat the chicken evenly.

3️⃣ Bake to Perfection

  • Place in the oven and bake for 45 minutes.
  • Stir the onions after 20 minutes to ensure even cooking.
  • Bake until the chicken is golden and the onions are tender.
