Grilled Fish Delight

Ingredients:

  • Fresh fish fillets (any type you prefer)
  • For the sauce:
    • 1 roasted red bell pepper
    • 1 tomato
    • 2-3 cloves of garlic
    • A handful of parsley
    • 2 tablespoons olive oil
    • 1 tablespoon vinegar
    • Plenty of red pepper flakes
    • Salt and pepper to taste

Instructions:

  1. Prepare the Fish:
    • Ensure the fish fillets are clean and dry.
  2. Prepare the Sauce:
    • Combine the roasted red bell pepper, tomato, garlic, and parsley in a food processor or blender.
    • Pulse until finely chopped.
    • Transfer the mixture to a bowl.
    • Add the olive oil, vinegar, red pepper flakes, salt, and pepper.
    • Mix well.
  3. Grill the Fish:
    • You can use a grill pan or a toaster oven.
    • Place the fish fillets on the grill.
    • Cook until the fish is cooked through and flakes easily with a fork.
  4. Serve:
    • Serve the grilled fish with the prepared sauce.

Tips:

  • You can adjust the amount of red pepper flakes to your preference.
  • This sauce can also be used as a dip or spread.
  • If you don’t have a toaster oven you can use a regular grill or a pan on your stovetop.
  • Make sure your fish is pat down dry before you place it on the grill. This will help prevent it from sticking.
