Ingredients:
– 3 lbs of Organic Ground Turkey.
– 2 Eggs ?
– 1/2 cup of Low Sodium Chicken Broth.
– Juice of 1 Lemon ?
– Lemon Zest ?
– 2 Cloves of Garlic.
– Italian Seasoning.
– Garlic Powder.
– Salt.
– Pepper.
– Avocado Oil ?
– 2 Tbls of Chopped Parsley.
– Marinara Sauce ?
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Directions:
1. For the meatballs, in a large bowl, combine the ground turkey, eggs, lemon zest, garlic, salt, pepper, and parsley until well-combined. Roll into balls.
2. Heat avocado oil in a large skillet over medium heat. Add the meatballs in a single layer and brown on each side.
3. Cook rice while meatballs are cooking.
4. Scoop the meatballs out of the skillet and wipe out extra grease. Then, return to medium heat.
5. Add the rice to the skillet and cook for 5 minutes, stirring constantly. Add the garlic and cook for another minute. Stir in the broth, lemon juice, and lemon zest and mix well.
6. Gently nestle the meatballs back into the rice mixture and cover the skillet. Reduce the heat to low, cover the skillet and cook for another 5 minutes.
7. Top meatballs with your favorite marinara sauce and enjoy! ?
