Spaghetti Squash Fritters ? Perfect way to use up extra spaghetti squash!! Paleo, GF, dairy free (you could sub in cheese though for the nutritional yeast-recipe at bottom!!) so they’re great for a variety of different lifestyles ? Topped mine 3 different ways because you’ve always gotta have a little variety to make it fun ? I had leftover salmon, then quickly mashed some avocado, and sautéed some spinach ?? Easy but soooo good! The recipe made 6 fritters so I think they’ll be really good as a savory breakfast too ?? Always thinking of the next meal ?? Haha we’re off to eat @chickfila because it’s our anniversary today/tomorrow (does that mean I get two presents @elipratte33 ??) Today is 6 years from when we first started dating and tomorrow is 1 year of being engaged! Eli missed the mark of only having one anniversary by a day ? Haha so we’re having a little picnic at where we got engaged + seeing A Star Is Born tonight! I’ve already seen it so I know what happens but Eli hasn’t so he’s in for it!! Spaghetti squash fritters (makes 6-7) Pat dry with a clean dish towel 3 cups of spaghetti squash. Combine with 2 eggs whisked + 1/3 cup nutritional yeast + 1/2 tsp chili powder + 1/2 tsp garlic powder + sprinkle of pink Himalayan salt. Cook in a skillet over medium heat for about 4-5 mins on each side. Topped with leftover salmon, mashed avocado with @traderjoes everything but the bagel seasoning, and sautéed spinach with red pepper flakes ??
