Spaghetti Squash Fritters ๐Ÿ˜ Perfect way to use up extra spaghetti squash!! Paleo, GF, dairy free (you could sub in cheese though for the nutritional yeast-recipe at bottom!!) so theyโ€™re great for a variety of different lifestyles ๐Ÿค— Topped mine 3 different ways because youโ€™ve always gotta have a little variety to make it fun ๐Ÿ˜œ I had leftover salmon, then quickly mashed some avocado, and sautรฉed some spinach ๐Ÿ‘Œ๐Ÿป Easy but soooo good! The recipe made 6 fritters so I think theyโ€™ll be really good as a savory breakfast too ๐Ÿ™Œ๐Ÿป Always thinking of the next meal ๐Ÿ˜‚๐Ÿ˜‚ Haha weโ€™re off to eat @chickfila because itโ€™s our anniversary today/tomorrow (does that mean I get two presents @elipratte33 ๐Ÿ˜œ๐Ÿ˜) Today is 6 years from when we first started dating and tomorrow is 1 year of being engaged! Eli missed the mark of only having one anniversary by a day ๐Ÿ˜œ Haha so weโ€™re having a little picnic at where we got engaged + seeing A Star Is Born tonight! Iโ€™ve already seen it so I know what happens but Eli hasnโ€™t so heโ€™s in for it!! Those of you who have seen it get what I mean haha. Combine with 2 eggs whisked + 1/3 cup nutritional yeast + 1/2 tsp chili powder + 1/2 tsp garlic powder + sprinkle of pink Himalayan salt. Cook in a skillet over medium heat for about 4-5 mins on each side. Topped with leftover salmon, mashed avocado with @traderjoes everything but the bagel seasoning, and sautรฉed spinach with red pepper flakes ๐Ÿ™Œ๐Ÿป
