Tuscan Italian Sausage pasta with spinach and sundried tomatoes?⠀

Tuscan Pasta (serves 4-6)⠀
1 pkg Field Roast Plant-Based Italian Sausage, sliced into ½ inch pieces⠀
3 cups spinach⠀
¾ -1 lb pasta, cooked⠀
Sauce:⠀
1 can coconut milk⠀
1 can diced tomatoes⠀
1 (8 oz) jar sun dried tomatoes, drained⠀
½ cup raw cashews⠀
3 garlic cloves⠀
2 tbsp nutritional yeast⠀
1 tsp salt⠀
1 tsp garlic powder⠀
½ tsp paprika⠀
1. Sauté the sausage in a large saucepan set over medium heat until golden brown, set aside.⠀
2. Blend all sauce ingredients in a high-powered blender until very smooth about 5 minutes on the highest speed setting.⠀
3. Pour the sauce into a large saucepan and bring to a simmer.⠀
4. Simmer for 10 minutes stirring often. Add the spinach until wilted.⠀
5. Toss the sauce with the cooked pasta and browned Plant-Based Italian Sausage. Serve
