?Reposting my ‘Three-Beans in delicious sauce, garlicky kale and crispy crinkle potatoes.?Today we are going on a long bike ride on a rail trail through a wooded park with some serious hills?! I’m sure I’ll be able to eat this whole bowl x3 when we’re done!!! Have a beautiful day friends.?
?Recipe beans: Sauté 1 diced onion in a little olive oil until starts to soften and turns translucent. Add 6 minced garlic cloves and 1 tsp smoked paprika and sauté another 30 seconds. Add 1 tbsp Dijon mustard, 1 tbsp apple cider vinegar, 1 tbsp tomato paste, 1/2-1 tbsp maple syrup (or to taste). Mix well and add 3/4 cup tomato sauce. Simmer on low about 7 minutes, adding bean cooking/can liquid if gets too dry. Mix in 3-15oz cans beans (rinsed and drained) of your choice. (I used great northern beans, black beans and garbanzos.) Heat through a few more minutes. Add salt and red chili flakes to taste. ?Recipe garlicky kale: Heat a little extra virgin olive oil and add 5 sliced garlic cloves. Sauté briefly until garlic is just starting to sizzle before adding 1 small head (washed and chopped) kale leaves. Sauté a minute or so before reducing heat and covering saucepan until kale just starts to wilt. Add salt and pepper to taste. Serve immediately.
