Fresh Italian Chopped Salad ?

makes 6 servings
2 medium avocados, diced
2 English cucumbers, sliced evenly
6 tomatoes on vine, sliced
1 medium red onion, sliced
1 cup mozzarella pearls
2 Tbsp extra virgin olive oil, or avocado oil
3-4 Tbsp fresh lemon juice
1 Tbsp dry Italian seasoning
sea salt and pepper, to your taste
Fresh dill weed, or parsley for garnish
Whisk oil, lemon juice, and Italian seasonings in a small glass bowl to make a dressing.

In a separate large bowl, gently add all the chopped veggies, and mozzarella.
Drizzle with the dressing, season with sea salt and pepper, then gently toss.
Garnish with fresh dill or parsley.
