?20-Minute Chickpea Curry (video in highlights)?20 minutes start to finish. Very few ingredients. (Oil-free option) ???As someone who went to culinary school, I’m embarrassed to post such an easy recipe! But when you’re feeding 5 people 3 times a day, these easy recipes that my kids enjoy are a blessing.
✅Recipe: ✅Put your rice to cook. ✅Sauté 1 large chopped yellow onion in oil, broth or water until translucent, about 5 minutes. ✅Add 3 minced garlic cloves + 2-3 tsp grated ginger and sauté another 30 seconds or until fragrant. ✅Add 2 tsp ground coriander and cook about another 30 seconds. ✅ Add 1-15oz can (or 1-1/2 cups) cooked chickpeas (rinsed and drained), 1-2 tbsp Thai red curry paste, 1 tbsp soy sauce or tamari, 1-14oz can regular coconut milk and 1/2 cup water. ✅Simmer 7-10 minutes. ✅Add 2 tsp fresh lime juice and mix. ✅Add 2 tsp brown sugar/maple syrup, or to taste. ✅Adjust hot sauce, lime juice and salt to taste. ✅Serve with chopped cilantro, rice and veggies of choice.
