This morning, I whipped up some savory waffles that turned out to be one of the best I’ve ever made. These Paleo cauliflower and (turkey) bacon waffles are a game-changer, topped with sautéed bacon and apples in ghee, beet kraut, and a drizzle of cashew milk yogurt. They are seriously simple to make and incredibly delicious. I actually prepared them last night and just toasted them up this morning.

Ingredients for Paleo Cauliflower and Bacon Waffles:

– 1/3 head of cauliflower, riced
– 1 egg
– 1 egg white
– 1 slice of bacon, chopped (or turkey bacon)
– 1 tablespoon of @nutiva coconut flour
– Himalayan salt and pepper to taste

To start, use nut milk bag to squeeze out all the water from the riced cauliflower. Mix the cauliflower with the rest of the ingredients in a bowl. Form two dough balls and place them in a preheated waffle maker on high heat for 2-3 minutes.

For the apple topping, sauté sliced apples and chopped bacon in ghee on medium-high heat in a cast iron skillet until caramelized.
