I won’t be surprised if you avoid high-fructose corn syrup (HFCS) but drizzle agave nectar on your cereal and pancakes with reckless abandon believing it is the healthier alternative HFCS and sugar. In reality, agave nectar is another fructose-rich sweetener, not much different from HFCS.

Unlike regular agave, organic raw agave syrup is naturally processed and does have slightly more minerals than mass-produced versions, but when it comes down to it, it is still fructose. Agave nectar actually has more fructose than both sugar and HFCS.

Is fructose unhealthy? Yes and No. In fruit, fructose comes as a package with enzymes, vitamins, minerals, fibre and other phytochemicals that are beneficial to health. On its own, as found in agave and HFCS, it can be a disaster when eaten in excessive amounts. Your liver is mainly responsible for the metabolism of fructose. In excessive amounts, your liver converts fructose into fat. These fat droplets are stored within the liver and can lead to non-alcoholic fatty liver disease. If you use agave nectar frequently, you may want to rethink your choice.
