?Black Beans & Veggies in Tahini Tomato Sauce (oil-free option)? This is such an easy dish to make. It’s a great way to use up your veggies. You can substitute with whatever veggies you have in your fridge. A cozy meal as we head into a Fall. I’m freezing today! I wish I had leftovers but we finished it all last night. Sending ?. ✅Recipe: Heat 1 tbsp olive oil or broth in a large saucepan. ✅Cook 1/2 large onion (diced), 3 minced garlic cloves, and 2 large carrots (cut into 1/2 -inch rounds), until the onions are translucent, about 5 minutes. ✅Add 1 cup bite-size broccoli florets, 1 small roughly chopped red bell pepper, 1-1/2 teaspoons chili powder, 1-1/2 teaspoon dried oregano, 1-1/2 teaspoon smoked paprika, and 3/4 teaspoon garlic powder. Cook for 1 minute. ✅ Add 2 tbsp tomato paste and mix well. Cook for 1 minute more. ✅Add 2-15oz cans black beans (drained), 1-15oz can diced tomatoes, 2 cups veggie broth and bring to a boil. Reduce the heat and simmer until carrots are just tender. ✅Add 1-1/2 cups finely chopped kale, 1 tablespoon coconut aminos or tamari, and 1 tablespoon tahini. Stir to combine and cook for about 1 more minute, or until the kale just starts to wilt. ✅Add salt and freshly ground black pepper to taste. ✅Serve with a grain of your choice.
