?Cauliflower Alfredo ? When the veggie shows up as the sauce, I notice everyone finishes their dinner in half the time! ? Veggie sauces are a big hit in my house. Serve with lentil or bean pasta to add protein. ✅Recipe (serves 3): ✅Cut 1 small head cauliflower into bite size florets (3 cups). Steam the cauliflower until fork tender. (Drain)✅Meanwhile, heat 2 tsp olive oil. Sauté 1/2 white onion until translucent, about 5 minutes. Add 4 minced garlic cloves and cook another 30 seconds. ✅Transfer sautéed onion/garlic to a blender and add: the steamed cauliflower (drained well), 1/2 tbsp lemon juice, 1/2 cup unsweetened almond milk or non-dairy milk, 1/2 cup veggie broth, pinch cayenne, 1/2 tsp tamari or soy sauce, 2 tbsp nutritional yeast. Blend on high until smooth. ✅Add more veggie broth or water until desired consistency. (You can add more nutritional yeast if you want a more cheezy flavor.) ✅Adjust lemon juice to taste. Add salt and ground white or black pepper to taste.✅(OPTIONAL: Heat 2 tablespoons vegan butter in a medium saucepan. Once melted, add the blender cauliflower sauce and mix. Cook until heated through.) ✅Serve with about 8oz cooked pasta.
