?Charred Asparagus + green pea fried rice?I find fried rice pictures very challenging ?!!! Hopefully I somewhat captured the yumminess of this fried rice I had a couple days back. Have a happy Thursday…?it’s almost the weekend!
?Recipe: Heat a little vegetable broth (or toasted sesame or neutral oil) in large skillet. Add 1 large shallot (finely chopped) and cook a few minutes until fragrant. Add 2 cups mixed chopped vegetables. (I used asparagus and cooked on high heat to get it to char.) Cook veggies a few minutes until they start to brown a little and are just starting to become tender but still have some crunch. (Add more oil or broth as needed.) Transfer cooked veggies to a bowl. Add more broth (or toasted sesame or neutral oil) to skillet and heat. Add 1 tbsp minced ginger, 3 minced garlic cloves and a generous pinch of red chili flakes and cook about 30 seconds until fragrant. Add 2 cups cooked rice and cook, stirring occasionally, until rice starts to stick a little. Add desired amount of defrosted green peas and 2 sliced green onions to rice and mix until combined. Remove from heat and stir in cooked veggies, 1 tbsp tamari (low-sodium), 1 tbsp vegan ponzu sauce (optional) and garlic chili sauce + sriracha + salt to taste. Sprinkle some chopped peanuts and toasted sesame seeds on top and serve. .
