GRAIN FREE SHRIMP SCAMPI! One of my favorite meals growing up…garlic and lemon and herbs, can’t go wrong 🙃 Made this with spiralized sweet potatoes Using my @mealthy SpiraSlicer tossed in a quick PARSLEY ARUGULA pesto/chimichurri. How was everyone’s weekend? I had a busy one and to be honest, happy that Monday is here! New week with a lot to do…but feeling good about it. What was your favorite part about this weekend? Deets: shrimp, sautéed sweet potato noodles with pesto, roasted tomatoes, roasted asparagus. Shrimp: sauté 4 cloves of garlic in 1 tablespoon olive oil and one tablespoon of ghee for about a minute, add 1/2 cup broth, some pepper and red pepper flakes and reduce to about half the amount for about 3 minutes. Pour in a pound of shelled shrimp and sauté until cooked through for about 2 minutes. Remove shrimp and add 1 tablespoon lemon juice and 1/4 cup of parsley and cilantro chopped and mixed. Cook down a bit but then pour sauce over shrimp. Pesto: 1/2 cup parsley, 1/2 cup arugula, 1 clove garlic, 1 tablespoon lemon juice, 1/4 cup olive oil, pinch of salt and pepper and blend until smooth. •
