Happy WAFFLE day! I have a new VEGAN PALEO waffle recipe for you today 🙃 (Recipe below) It’s literally 80 degrees here in Boston and I’m jumping for joy! Made these babies for breakfast/lunch…sooooo delicious. I’ve been making a lot of big breakfasts and saving half or so for lunch/snacks (my kinda meal prep 😉). Topped 4 ways with…mashed avo/smoked salmon…@majesticgarlic hummus/ @vitalfarms egg/pea shoots/sunflower seeds…almond milk yogurt/avo/tahini/bagel seasoning…banana/strawberries/granola/chocolate chips/ @spreadthelove almond butter. Which one would YOU choose? I ate the sweet one first 😋 Happy Wednesday lovelies!



Waffle Ingredients: (made about 7 of these mini waffles) 1 Cup almond flour, 1/4 cup arrowroot, 1/4 cup mashed plantain, 1 scoop plant protein (I used @mrm_usa), 1 flax egg, 1/2 cup almond milk, 1 teaspoon lemon juice, pinch of sea salt, 1/2 teaspoon cream of tartar and 1/4 teaspoon baking soda. Mix together dry ingredients then add wet—-batter will be thick. (If you want sweeter add vanilla and maple syrup and sub banana for plantain)
