I was hoping to cook quinoa tonight but my order has still not arrived ? Pasta was the next best thing so I made pesto chickpeas to go with it.

I tried something a little wacky with my pesto recipe today.. instead of water, I used almond milk ? but it made for the creamiest, yummiest pesto ever! Now I’m thinking to experiment with a little tofu…
