I would give my left arm for these TEN MINUTE“CHEESY” CUMIN-SPICED AVOCADO SPINACH and BLACK BEAN Quesadillas and TWO INGREDIENT MANGO CHIPOTLE SAUCE! Happy Friday loves! Throwing it back to these babies today, since I’m running around in a bazillion directions. They are the perfect Friday night meal…easy and comforting! You could make them paleo if you used swapped the beans for eggs/chicken or another protein. As much as I love a cooking, I also like EASY, especially since I spend so much time in the kitchen. I’m getting ready for a girls shopping and dinner excursion and headed to an amusement park tomorrow with 7 kids! What is your favorite quesadilla filling? And any big plans this weekend?


Deets: 2 @sietefoods almond tortillas heated up on medium high in a pan sprayed with avocado oil, (I heated the spinach in the same pan while the tortillas were cooking). Mash some black beans onto one side of the tortilla and add a sprinkle of cumin, then top the beans with vegan Gouda (or any cheese or your choice). Once the cheese starts melting add some of the wilted spinach and some mashed avocado and fold over. Cook for another 30 seconds or so. Mango Chipotle sauce: 1/2 ripe mango blended with 1-2 tablespoons of @sietefoods chipotle sauce (or any hot sauce if your choice). •
