My simple lunch bowl of tarragon ?, parsley butter beans and sautéed spinach. This comes together in no time at all, uses minimal spices and herbs but yet is extremely flavourful! You can see how I’ve prepared most of it in my stories today, I will post the full recipe on my blog ASAP.

This plate is perhaps one of the most obvious representations of how we need to build our plates to eat the correct proportions of food. ¼ protein, ¼ starch/complex carbs and ½ veggies. It includes healthy fat here from coconut oil (used in the spinach), the ? also contain whole fat. Now of course, you can use tempeh or tofu in place of eggs here, but I cannot do that anymore because it will be an overdose of legumes for my gut.
