Celebrating Meatless Monday with this KALE BASIL HEMP pesto recipe I made a while back. Plus these crispy breaded chickpeas that I have posted on the blog. Hope you all had a fantastic weekend. I have had a super relaxing Monday so far…hot yoga, good eats, self care and planning for fall recipe and my cookbook coming out this fall 🙃 taking suggestions for fall! How was your weekend?



Deets: greens, soft boiled egg, tomatoes, almond flour breaded chickpeas (Toss in a little olive oil, almond flour and spices and bake on 400 for about ten minutes), chickpea pasta topped with this pesto. Pesto: 2 cups chopped kale, 1 cup fresh basil, 1/3 cup olive oil, 2 garlic cloves, 1/2 teaspoon salt, 1/3 cup hemp seeds, 1 tablespoon coconut aminos, 2 tablespoons lemon juice and 1/4 teaspoon red pepper flakes. •
