Oops I did it it again… another shrimp dish ?♀️ dairy free BUFFALO SHRIMP stuffed zucchini boats. SO FREAKING GOOD! You could easily do this with chicken too. I baked the zucchini boats first then stuffed them, but you could also throw them back in the oven with cheese on top if you wanted. Not feeling too hot today so I’m trying to rest up. Deets: slice zucchini down the middle, trim ends and scoop out the flesh. Brush with oil and place face down on rack in oven. Bake for about 10 mins before flipping. While the zucchini is cooking, sauté some spinach with salt and pepper and boil some shrimp. Toss the shrimp in some buffalo sauce (if you don’t have any you can mix 1/4 cup of hot sauce with 1-2 tablespoon warm ghee, 1/2 teaspoon garlic powder, 1 tablespoon coconut aminos and 1 teaspoon apple cider vinegar and blend.) take zucchini out after another 10 mins and stuff with spinach, @kitehillfoods dairy free cream cheese, tomatoes, avocado, Scallions, cilantro, red onion and drizzle with tahini. Serve with a half baked sweet potato. •
