PESTO AVOCADO SPINACH GRILLED “CHEESE” WITH EASY HOMEMADE TOMATO SOUP! Happy Thursday! This was lunch yesterday and it was BOMB. I used @thesolacompany keto bread. Deets: SANDWICH: 2 slices @thesolacompany Bread heated over medium high in ghee, add a layer of pesto, baby spinach and mashed avocado to one side and cheese to the other (I use dairy free Gouda) and allow to heat for 2-3 minutes until the cheese melts then put the two halves together! SOUP: heat one tablespoon olive oil (or butter/ghee) over medium heat. Add 1 medium onion chopped, 3 cloves garlic minced and one large carrot chopped. Sauté for about 3 minutes until soft. Add 1 cup broth (more if you like thinner soup—I used bone broth but feel free to sub), 28 ounces jarred tomato sauce (or homemade), 2 tablespoons tomato paste, 1/2 teaspoon hot sauce, 2 tablespoons fresh chopped basil, 1 teaspoon dried oregano. Bring to a boil then reduce heat and cook for about 10 minutes. Use a blender or immersion blender to blend just slightly (or purée if you want it completely smooth). Add Salt/pepper to taste. •
