🌱Saucy Noodles with Crispy Tofu🌱Simple & delicious speedy lunch. I had a side of sesame roasted broccoli with these yummy noodles. 💚Happy weekend friends.💚
✅Recipe noodles: Cook 8oz round udon noodles (or preferred noodles) as per packet directions. Drain and set aside. ✅In a small bowl, mix 1/3 cup low-sodium tamari or soy sauce, 2 tbsp hoisin sauce, 2 tsp maple syrup, 1 tsp sriracha, 3 minced garlic cloves. Set aside. (If you don’t have hoisin, you can make this sauce instead: 3 tbsp coconut aminos, 1 tbsp dark soy sauce, 2 tbsp tamari, 3 tbsp maple syrup, 2 tbsp rice vinegar, 2 tbsp toasted sesame oil, 2 tsp sriracha.) ✅Heat 1 tbsp sesame oil over medium-high heat in a large non-stick skillet. Add the noodles and sauté until they start to get crispy. Add the sauce and use tongs to mix the noodles into the sauce. Cook until warmed through. ✅Tofu: Press 1-14oz block extra-firm tofu. Cut into 1/8-inch thick triangles. Sprinkle with some salt and garlic powder. ✅Heat 2 tsp sesame oil in a large non-stick skillet over medium-high heat. Cook tofu until browned on both sides. (You may have to cook in 2 batches and add more oil as needed.) ✅Add enough coconut aminos or tamari to cover bottom of skillet. Mix tofu into the sizzling coconut aminos/tamari, adding more as needed, until tofu is browned and flavorful. Serve on top of noodles.
