?Smokey riced cauliflower bites (oil-free)?I have always made my own cauliflower rice but admittedly the process deters me from making as many cauliflower rice dishes as I’d like. So this time I bought pre-made frozen cauliflower rice and it worked great. Sometimes taking the easier route is worth it?. Happy Sunday friends.?
?Recipe: Thaw 1-12oz bag frozen cauliflower rice. Meanwhile, make flax eggs by mixing 2 tbsp ground flaxseed (flax meal) with 6 tbsp water. Let sit 10 minutes. Use cheesecloth (or paper towels) to squeeze as much water as possible from the thawed riced cauliflower. Transfer riced cauliflower to a large bowl. Add 2 tbsp nutritional yeast, 1 tbsp panko breadcrumbs, prepared flax eggs, 1 tsp garlic powder, 1/2 tsp smoked paprika, 1/4 tsp chili powder, 3/4 tsp chipotle, 1/2 tsp salt (or to taste). Use hands to mix until everything is fully incorporated. Make about 6 balls of equal size. Spread approximately 1/4 cup panko breadcrumbs onto a plate. Coat each cauliflower ball with breadcrumbs by rolling in panko. Either bake balls on lined sheet at 400F until golden brown (about 20-25 minutes), or cook in air-fryer at 400F about 25 minutes. Flip half-way. Served with sriracha ketchup.
