a colorful summer with delicious salads?
Good afternoon everyone! I hope you are all having a wonderful day. As I mentioned earlier, I have a light work week which means I have some extra time in the afternoons to relax and work on other things. Today, I decided to make a colorful and delicious chopped kale, chicken, and veggie salad with a creamy cashew yogurt dressing.
This salad is loaded with all the good stuff – kale, beets, tomatoes, bell pepper, avocado, red onion, red cabbage, organic COTTON CANDY grapes (yes, they are a thing!), and roasted herbed chicken. To finish it off, I added some fresh mint, mustard seed, and a simple yet dreamy dressing that ties everything together perfectly.
For the dressing, all you need is:
– 1/3 cup of unsweetened cashew milk yogurt from @foragerproject
– 1 tablespoon of nutritional yeast
– 2 teaspoons of coconut aminos
– Himalayan salt and pepper to taste
Mix all these ingredients together and drizzle it over your salad for a burst of creamy flavor that will elevate every bite. It’s the perfect way to add some extra goodness to your summer salads.
