Sunday Salad we meet again! I could eat salads for almost every meal…the best part about them is you can always do something different to them! For me, the key is to add layers and textures. For instance, I always like having some raw veggies and cooked veggies to add some depth and diversity. I also usually always add fresh herbs and some sort of protein, spices and a good dressing. Always include some sort of starch and fat. Sometimes I add some nuts or seeds or avocado. This salad is filled with @organicgirl arugula, chopped raw beets, raw red cabbage, sautéed shiitakes, sautéed peppers, sautéed onions, sun dried tomatoes, roasted organic chicken and fresh basil! Paired with some of @jilzcrackerz Mediterranean crackers adds a wonderful crunch and finger food ? and topped with a creamy lemon tahini dressing (@soomfoods tahini, lemon juice, coconut aminos, @foragerproject cashew milk yogurt and salt/pepper.) with the variety of flavors and textures, every bite is delightful!
