✅Recipe: ✅Boil 1 packet (8 oz) tempeh for 5 minutes to reduce bitterness. ✅Drain and cut into 3/4-inch pieces. ✅Slice 1 medium zucchini into half circles. ✅Mix sauce: 1 cup canned pineapple juice, 1/3 cup rice vinegar, 2 tbsp soy sauce/tamari, 3 tbsp ketchup, coconut sugar/sugar/maple syrup to taste (depending on how sweet your juice is). ✅Make cornstarch slurry: dissolve 1-1/2 tbsp cornstarch in 1-1/2 tbsp water. Add slurry to sauce and mix well. ✅Heat 1 tbsp neutral oil in a large non-stick skillet. Sauté tempeh cubes until golden brown. Remove from skillet. ✅Add zucchini to skillet and sauté until just golden. ✅Add back tempeh to skillet. Add sauce gradually until desired amount and cook until sauce thickens and heated through. ✅Serve with rice or noodles.
