Thank COD it is FRY DAY! The only HASSLE in my day today is this bowl of crispy fingerlings and this CHILI LIME roasted cod…paired with some cilantro lime hummus. ? happy weekend loves! Deets: chili lime roasted cod (brush cod with olive oil and coconut aminos and generously season with @traderjoes chili lime seasoning. Squeeze a little lime over top and bake on 400 for about 10 mins). Paired with roasted tomatoes, roasted asparagus, hassleback fingerling potatoes and cilantro lime hummus. Hummus: one can chickepeas (I remove outer layer with a paper towel), 3 tablespoons tahini, 3 tablespoons olive oil, 1/2 Cup cilantro, 1/2 teaspoon salt, 1/2 teaspoon red pepper flakes, 2 tablespoons lime juice, 3 tablespoons water. Blend until smooth in food processor and add water if you want it thinner. •
