This meal just gave me life. Seared GARLIC LEMON SCALLOPS and EASY DAIRY FREE CAULIFLOWER HERBED RISOTTO! I’ve been trying to make a good Dairy free cauliflower risotto for so long now and I nailed this one…Yogurt gives it the creamy texture and guys it’s so goood! Also, fresh scallops were on sale this morning and I couldn’t turn them down 🤷‍♀️ They are super easy to make and super delicious. Happy Thursday loves! What are everyone’s plans this weekend? •

Deets: wild scallops (pat dry) and season with salt and pepper and sear on medium high in cast iron with garlic ghee for two minutes per side. Squeeze lemon juice over. Sautéed broccolini. Risotto: I cut the cauliflower up so I would have larger “rice pieces”. Sauté 1 minced onion in 2 teaspoons coconut oil for about two minutes on medium high, add two minced garlic cloves and sauté for a few more minutes. Add 3 cups of riced cauliflower (fresh) and 1/2 teaspoon salt and 1/4 teaspoon pepper and saute for another minute. Add 1/2 cup of broth or water, reduce to medium and cover for about 5-7 minutes until the cauliflower has absorbed water and is soft. Remove from heat and place in a bowl. Allow to sit for about 5 minutes then add 1/2 cup dairy free yogurt and 1/3 cup chopped fresh herbs (I used parsley and cilantro. Mix together and squeeze some lemon over. Add more salt if needed. •
