?Sweet potato+quinoa+black bean burgers (oil-free, gluten-free)?Don’t let quarantine get you down?. Have a few of these burgers and you’ll feel so much more uplifted!? They hold together really well…what we need at times like these! They’re very healthy and extremely delicious. Sweet potatoes make everything better. Sending love and good health?.
?Recipe (makes about 8 patties): ✅Wash 2 medium sweet potatoes. Prick the potatoes in a few places with tines of a fork. Bake on lined sheet at 400F. Flip them over after 20 minutes and continue cooking until can easily pierce with a fork. Once cool, slice lengthways and scoop out flesh with a spoon.✅Cook 1 cup dry quinoa as per packet directions.✅Combine in food processor: the cooked quinoa, 1 cup cooked black beans, 1 cup flesh of sweet potato, 1/2 cup chopped red onion, 1 tbsp lime juice, 2 tsp cumin, 2 tsp chili powder, 1 tsp smoked paprika, 1 tsp ground coriander, 1/2 tsp garlic powder, several turns black pepper, salt to taste. Process until combined (but not mushy) with some whole black beans remaining. ✅Transfer to large bowl and form into patties.✅Bake at 375F on lined baking sheet about 20-25 minutes, flipping them over after 12 minutes. Allow to cool a few minutes so they can set.
