This probably looks a mess ?I lost track of time and tried to put something together really quickly – it’s a veggie stir fry with peanut sauce over quinoa.

Ingredients
200g tofu, chopped
½ tsp ginger powder
1 garlic clove, finely minced
75g broccoli
75g cauliflower
2 spring onions
200g mushrooms
100g peas
100g quinoa
1 tbsp chopped roasted peanuts

For the sauce
40g smooth peanut butter
1 tbsp sweet chilli sauce
3 tsp tamari
1 tsp sesame oil (optional buy great for flavour)

Cook the quinoa according to the pack instructions then set aside.

Heat a non-stick frying pan over medium heat and fry the tofu until browned on both sides. Remove from the pan and set aside.

Return the pan to the heat then add the sesame oil. Stir fry the ginger, garlic, and spring onions with the vegetables (mushrooms, broccoli, cauliflower, and peas) until they become tender. Add the tofu and 2 tsp of tamari, stir well then take the pan off the heat.

Combine all the ingredients for the sauce in a small bowl, loosen with 1 tbsp of hot water to form a smooth sauce.

Divide the quinoa and vegetables among two bowls and drizzle over the peanut sauce. Sprinkle with chopped coriander, crushed peanuts and chilli flakes. #veggiestirfry #veganbowl #vegandinner
