Today was the perfect day for a noodle stir-fry. I didn’t have time to post this recipe on my blog today, so I’m going to give it to you right here especially since it’s super simple ?

100g whole wheat noodles
50g sugar snap peas
100g broccolini
1 small red sweet (bell) pepper, roughly chopped
1 fat garlic clove, finely minced
1 large spring onion, sliced
½ inch fresh ginger, grated
50g edamame
50g peas
2 tbsp hoisin sauce
2 tbsp chilli garlic sauce
100g chestnut mushrooms, sliced

Heat a small splash of water in a non-stick pan or wok. Add the spring onions, garlic and ginger. Cook for 2-3 minutes until fragrant. Add the broccoli, mushrooms, red pepper, edamame, peas and a small splash of water to loosen. Sauté for 5-6 minutes or until the vegetables are cooked, adding small splashes of water if necessary. Cook the noodles according to the pack instructions then serve with the stir-fry. Enjoy ?
