Been dreaming of these 6-ingredient vegan + gluten free chickpea blondies for the past few days 😍 I’m definitely adding them to my baking to do list this weekend ✨ Did I mention these blondies are made of CHICKPEAS?! I’ve said before that I was a HUGE skeptic of this before I tried them and now I’m a convert 🙌🏼.
To make 👇🏼:
1 can of chickpeas (drained and rinsed) – 1/2 cup peanut butter – 1/3 cup maple syrup – 1/4 tsp baking powder – 1/4 tsp baking soda – a pinch of salt.
Blend everything together in a blender or food processor until smooth. If you’re using a blender without a tamper, add a small amount (1 tbsp at a time) of plant based milk until it blends. The mixture should still be thick, though, and will need to be cooked for longer (until a fork comes out clean) if you add milk. Mix in 1/3 cup chocolate chips and bake in the oven at 350 degrees F for 25 minutes until the edges are golden brown. Enjoy! 💫
