EASY ENERGY BALLS ✨ You asked for more snack recipes, so more snack recipes is what you’ll get 😍 These are my favourite simple + sweet snacks to meal-prep because they’re SO delicious and full of protein, healthy fats and carbs to make the perfect balanced snacks 🙌🏼 These little powerhouses pretty much single-handedly got me through my dietetic internship because they could be eaten in 60 seconds flat and were super portable 🙌🏼 You can play around with the flavours to make your tastebuds happy, but this is my favourite combo! ✨.
Pit and slice 1 cup of medjool dates. Add dates to a large bowl with 1 tbsp peanut butter, 2 tbsp chia seeds, 1 tbsp cocoa powder, 3 tbsp sunflower seeds + 2 tbsp coconut flakes. Use hands or a food processor to combine all ingredients together, then roll into balls and refrigerate! This recipe makes about 8-10 balls and will stay fresh in an airtight container for at least 5 days, but can also be frozen! Enjoy 💛
