Greek inspired quinoa salad coming in to save the day on this busy Monday ✨ This is one of my favourite combos- mostly because it tastes amazing and can be thrown together in just a few minutes! 🙌🏼.
One of my biggest tips for preparing easy and nutritious meals is to have a quick cooking grain, canned legumes and and easy greens like arugula, spinach or baby kale to throw together 🌿 Top with any other add-ins you have on hand and you’re left with a super delicious, nutritious meal 🍂.
To make 👇🏼:
Place 1 cup of cooked quinoa, a few handfuls of arugula, legumes of choice (I like chickpeas and edamame!), olives, red onion, yellow peppers + celery in bowl. Top with a few tbsp of olive juice, lemon juice + 1 tsp oregano (all to taste). Mix to combine and enjoy! 💛
