Happy July 4! Store bought veggie burger with toppings and a side of roasted corn on the cob, and a yummy roasted purple sweet potatoes, sugar snap peas from the farmers market, seasoned with mint from the garden, a little olive oil and salt. No grill here, all done in the oven. I’m okay with that, well not really lol. The dish was inspired by @veggies.fruits.grains Jenny was using purple potatoes in her creations, and I had to give it a try! Enjoy your evening my American friends ???
