Honestly wishing I could dive into this homemade miso mushroom soup right now 🍵😍 This soup doesn’t look like anything special, but I’m convinced that this broth can help soothe even the worst sore throats and headaches, especially on cold days like today✨.
To make 👇🏼:
Bring 4 cups of water to a low boil. Add 2 cups of sliced mushrooms (and any other veggies of choice) + 1/3 block of cubed tofu and simmer for about 10 minutes. Remove from heat and scoop out 1/3 cup of the broth and whisk together with 2 tbsp miso paste. Pour the mixture back into the pot + add 1 sheet of seaweed cut into strips. Serve and enjoy! 💛
