Mung bean curry with brown rice, ? kale and ?.

Mung beans don’t take very long to cook and they don’t bother my stomach at all so I usually don’t bother with soaking them overnight. In saying that, it’s a good idea to soak them to get rid of some of the difficult-to-digest starches that cause bloating.

✨Recipe? Serves 4
300g uncooked mung beans
2 medium shallots, finely chopped
2 fat garlic cloves, finely minced
2 tbsp tomato purée (paste)
1.5 tbsp garam masala
1.5 vegetable stock cube
1 tsp chilli powder
1 tsp madras curry powder
1 tsp ground cinnamon
1 tsp ground coriander
Handful coriander (cilantro) stalks, chopped

1.Rinse and cook the Mung beans then set aside.
2.Heat a small splash of water in a medium saucepan over medium heat. Add garlic and onions and cook for 1-2 minutes. Then add spices and cook for 3-5 minutes.
3.Add the tomato purée, chilli powder, coriander stalks and vegetable stock cube, stir well then add around 300ml of water. Bring to the boil then turn the heat down to a simmer and let that cook for around 15 minutes.
4.Add the cooked mung beans, stir well and adjust seasoning if necessary.

Serve with any grain of your choice, potatoes, bread or whatever you fancy. Don’t forget your greens ?
