My lunch most days usually looks a little something like this ✨ A mishmash of meal prep or leftovers combined together, topped with a delicious tahini-lemon drizzle or a big dollop of hummus ?.

With Canada’s new Food Guide showing the importance of a balanced plate, meals like this can be an easy way to make sure you’re getting half your plate of veggies (kale, beets and sweet potato), 1/4 plate of whole grains (quinoa) and 1/4 plate of plant-based protein (chickpeas) ✨ These one pan meals are my favourite because I can roast my chickpeas, veggies and sweet potato easily while some whole grains like brown rice, quinoa or pasta cook ✨.

It’s important to remember that not every meal needs to look like this ?♀️ When I’m making soups, stir-fries, stews or curries I just try to make sure I’m getting about double the amount of veggies as protein and whole grains, but I definitely don’t sweat it if all my meals aren’t perfectly “balanced” ? It’s what we do most of the time that matters more than what we do some of the time!?
