Obsessing over this peanut-lime Buddha bowl as the perfect fuel to get me through a busy day 🙌🏼 I love throwing together bowls like this, because the flavours completely change depending on what sauce you use! ✨ This sauce was absolutely delicious and SO easy to make 😍.
To make 👇🏼:
Toss cubes tofu + sweet potato with garlic powder + cook at 450 degrees F for 25 minutes. Meanwhile, make quinoa as per package instructions. To make the sauce, whisk together 1 tbsp peanut butter, 1 tsp sriracha, 1/2 tsp sesame oil, 1 tsp lime juice, 1/8 tsp each of ground garlic + ginger, 1/2 tsp soy sauce, and enough water to thin. Once the off + sweet potatoes are done, combine with veggies of choice, drizzle with sauce and enjoy! 💛
