Rosemary garlicy baked potatoes. It’s all I had the energy to whip up after a crazy last couple of days! @blissfulgatherings #4 was last night and it was soooo magical. Let me know if you guys want to see all 5 courses and I would love to share ?
Ingredients
- Preheat the oven to 400 degrees F.
- Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated. Dump the potatoes on a baking sheet and spread out into 1 layer; roast in the oven for at least 1 hour, or until browned and crisp. Flip twice with a spatula during cooking to ensure even browning.
- Remove the potatoes from the oven, season to taste, and serve.

Course 1: caprese salad; fresh heirloom tomatoes, basil, Smokey mozzarella (yesss vegan?), balsamic glaze
Course 2: minestrone soup: hearty veggie and bean soup
Course 3: pesto gnocchi over a arugula salad
Course 4: spinach and ricotta tortellini with garlic bread
Course 5: vanilla espresso cheesecake with a chocolate cookie crust
