Simple Greek-style lemony potatoes ✨ Does anyone else feel like today is the true first day of 2019? 🙌🏼 Even though the holidays are technically over, I’ve still spent the past week relaxing with family and friends and am only just starting to get back into the swing of things⚡️ I spent the morning working on my New Years intentions and it felt SO good to think about the new year 😍 For lunch I was craving these Greek-inspired lemon potatoes, which would be perfect to meal prep for the week and add as a side to lunches or dinners 🌿.
To make 👇🏼:
Slice ~9 small-medium sized yellow potatoes into wedges. In a large bowl, toss potatoes with 1/4 cup of olive oil, 1/3 cup of lemon juice, 2 tsp oregano + 1 tsp salt (or to taste). Lay in an even layer in a baking dish at least 2 inches deep, then pour 2 cups of veggie stock over the potato mixture. Bake at 400 F for ~75 minutes, tossing occasionally, or until veggie stock has mostly evaporated and potatoes are fork tender. Serve with veggie + tofu skewers or as a side to any dish! 💛
