Toasting to Tuesday with this simple tomato + olive bruschetta 🌿 All I’ve been craving these past few weeks are sweet and vibrant cherry tomatoes, which is a good indication that summer is just around the corner 🙌🏼 I paired this bruschetta with an olive sourdough loaf that was so good I almost ate the entire thing in one day (thank you everyone on Instagram Stories for believing in me 💛).
To make 👇🏼:
Combine 2 chopped tomatoes (or 2 large handfuls of halved cherry tomatoes) in a bowl with 6 chopped kalamata olives, 1 clove of minced garlic, 6 torn basil leaves, a drizzle of olive oil and a pinch each of salt + pep. Let sit for a few minutes (if you have the willpower). I usually broil my bread until golden brown on each side, then add the bruschetta to the top and broil again until the tomatoes have deepened in colour ✨
