Easy little breakfast bowl this morning ? Nothing fancy, nothing too crazy, just a good ol’ egg and veggie bowl ?? Stayed up wayyyy too late last night so after an extra cup of coffee, this little bowl was just what I needed to get me going ?? I’ve been eating eggs a lot this weekend because I didn’t buy a ton of other food so I didn’t waste it! This has been my go to breakfast or lunch every day ? It’s 1) simple 2) cheap so I’m not going to complain ? Plus it’s quick to throw together! I just fried an egg and paired it with leftover veggies ? Sometimes it’s fun to make big weekend breakfast spreads but also it’s nice to just keep it simple! We had such a fun day yesterday at the game (and they won woooo) and it’s just been a great week of Eli’s break! Seriously couldn’t have asked for anything more than getting to spend time with each other, friends, and family! Soaking up one last day at home before heading back today ❤️ Happy Sunday!! —————————————————————————— breakfast details ?? 1 egg cooked in a nonstick pan with @traderjoes coconut oil spray topped with @traderjoes everything but the bagel seasoning + roasted brussel sprouts (just broiled from frozen on the middle shelf for about 10-12 mins, I pulled them out halfway through to season them with a little bit of garlic and pink Himalayan salt, then put them on the top shelf at the very end to get them crispy) + tomatoes cooked with the Brussels
