Pumpkin Plant Based Pasta Sauce 😍 Say that 5 times fast… My go to plant based pasta sauce got a pumpkin update because I’m slowly turning every recipe I love into a pumpkin one 😂 ⠀

Used @eatbanza chickpea pasta because it’s packed with more protein + fiber than regular pasta. It keeps me full longer and it’s gluten free! There are so many great chickpea pastas out there now, you can find different brands at lots of stores. It makes me so happy to see health food products becoming more mainstream. I spent most of my life in rural areas where we didn’t have lots of options for grocery stores so seeing health food products be in stores like Walmart and Aldi makes me so happy! A random side note but just a cool thing that’s happening. Anyways, hope you guys have a great evening and enjoy this recipe! ❤️❤️ ⠀

heathfood details 👉🏻 You’ll want to soak 1/2 cup cashews overnight so they’re easier to blend. The recipe is:⠀
1/2 cup soaked raw cashews + 1/2 cup unsweetened almond milk (you can add more for a thinner sauce but start with this and add as you go) + 1/4 cup pumpkin + 1 tsp garlic + 1 tsp cinnamon + 1/2 tsp black pepper + sprinkle of salt to taste. Mix it all together in a food processor or blender. I’ve found the food processor makes it into a better sauce than the blender but both work. Served over @eatbanza chickpea pasta with sautéed kale and @traderjoes everyday seasoning
