Salmon, asparagus, and cauliflower gnocchi for dinner ? This dinner comes together in 15 minutes and it has so many favorites! The crispy cauliflower gnocchi has my heart ?? Nothing beats it! I love cooking it in either ghee or avocado oil to get it nice and crispy. ⠀

We broke the rules and had dessert before dinner though ? I made us some hot chocolate after we put our evening walk plans on hold due to rain. Turned out soooo delicious and makes me pumped for this fall weather? Having something sweet before dinner reminds me of the lyric in Lover “this is our place, we make the rules” ? Followed the hot chocolate with this easy meal! Surprisingly we didn’t spoil our dinner ? Hope you guys had a great day! ⠀

healthydinner details ?? Preheat oven to 400F. Cut and wash the asparagus, coat with 1 tsp oil ( I used avocado oil) + sprinkle @traderjoes everyday seasoning on top. Bake on a greased baking pan for 15 minutes, turn with a spatula halfway through. Then for the gnocchi, thaw it out in the microwave then sauté in oil over medium heat in the skillet for 5 ish minutes, until it’s crispy. Keep scooting it around so it doesn’t stick. Finally: remove the gnocchi and get your salmon going! Add more oil if needed, sprinkled a little garlic powder, salt, and pepper on it. Cook for 3 minutes on each side. Enjoy!
