this stew is so good that i eat it for dinner and then again the next morning for breakfast. that’s love. since i don’t eat meat, lentils are a huge protein source for me! i eat them in salads and my lentil bolognese sauce, but my new favorite way is this hearty stew. so perfect curled up under the christmas tree (still…) commitment issues ??♀️ happy friday boos! ▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️▪️
loaded lentil stew: •1 onion
•1 box steamed lentils (canned or dry lentils would work here too)
•1 cup brussel sprout halves
•1 cup steamed broccolini tops
•few handfuls of spinach
•2 cups vegetable stock •2 tablespoons chickpea miso paste
•sea salt
sauté the onion in oil, miso paste, and sea salt until soft. then toss in remaining veggies (except for the spinach) and add the vegetable stock and more salt. bring heat to medium high and cook partially covered, stirring every few minutes for about 20 minutes. bring heat to low and let cook covered for another 15 minutes so some of the liquid can absorb. toss spinach in at the very end and serve! .
