Cilantro Garlic Lime Shrimp Salad .

For the Shrimp:
Cilantro Garlic Lime Shrimp
Simple Directions:
SERVES 4
{Preheat oven to 375 degrees}
In a large bowl combine:
1 lb large raw shrimp peeled & deveined, tails on(rinsed & pat dry)
2 Tbsps, avocado oil, olive or melted coconut oil
1 bunch coarse chopped cilantro leaves
juice of 2 fresh limes
4 cloves fresh minced garlic
1 tsp sea salt {Combine all ingredients, lay on flat sheet pan. Bake 10-11 minutes in your preheated 375 degree oven until shrimp are fully cooked}
Roasted Fresh Corn & Jalapeños
(Excellent on the salad, with eggs, or topping a burrito bowl)
Preheat oven to 350 degrees f
4 ears of fresh, organic corn, corn removed from the cob
4 medium jalapeños, seeded & sliced into rings
2 Tbsps, avocado oil, or extra virgin olive oil
sea salt to taste
{Combine well, lay on flat sheet pan, roast in preheated 350 degree oven for about 20 minutes}
Simple Cilantro Lime Dressing:
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar
2 Tbsps water
Juice of 2 fresh squeezed limes
2 cloves fresh garlic minced
1-2 Tbs chopped cilantro leaves, depending on preference
1 tsp sea salt
{Whisk or blend well, Serve immediately} .
