Dark Chocolate Covered Fruit ??????
{A FUN after school treat to make with the kids!} Ingredients:
1 cup high quality dark chocolate, chopped
1 Tbsp coconut oil
Options for dipping:
8 large strawberries
1 crisp apple, cut into 6 slices
2 fresh apricots or nectarines, cut into 8 segments
1 banana, sliced into 1/2 inch thick slices +
2 Tbsp almond butter
2 Tbsp chopped almond pieces
2 Tbsp unsweetened, dried coconut
Instructions:
Line a large baking sheet with parchment paper.
Melt chocolate with the coconut oil in a double broiler on the stove top, or microwave for 30 seconds. Stir, and add 15 seconds if needed.
Dip strawberries halfway into melted chocolate, then sprinkle with nuts. Place it on the lined baking tray.
Dip apples 1/3 of the way into melted chocolate. Sprinkle dried coconut on top. Place on the lined baking tray.
Dip apricot segments half way into melted chocolate Then sprinkle with nuts.
To make the frozen banana bites: Slice bananas 1/2 inch thick. Add 1 teaspoon almond butter on half of the banana slices and place the other banana slice on top.
Add a toothpick in the middle to hold it together. Dip banana bite halfway into melted chocolate. Sprinkle with chopped nuts.
Place the baking tray with all the fruit in the freezer for about 15 min.
When the chocolate is solid you can remove from the freezer and serve, or keep it in the fridge/freezer in an airtight container for up to 3 days.
